- Preheat the oven to 400°F.
- Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 35 to 40 minutes until soft.
- While the garlic roasts, place the potatoes in a large pot and cover with cold water.
- Bring to a boil and cook for 15 to 20 minutes, or until the potatoes are fork-tender. Drain well.
- Return the potatoes to the pot.
- Squeeze the roasted garlic cloves into the pot with the potatoes.
- Add the butter, warm milk, salt, black pepper, and remaining 1 tablespoon olive oil.
- Mash until smooth and creamy.
- Serve warm.
