  • 6 ears fresh corn husks removed
  • 4 tablespoons unsalted butter softened
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1/4 teaspoon salt
  • 2 tablespoons chopped fresh cilantro optional

  1. Preheat a grill to medium-high heat.
  2. In a small bowl, mix the softened butter, chili powder, smoked paprika, lime juice, lime zest, and salt until well combined.
  3. Place the corn directly on the grill grates.
  4. Grill the corn for 10 to 12 minutes, turning every few minutes, until lightly charred and tender.
  5. Remove the corn from the grill while still hot.
  6. Brush the chili-lime butter generously over each ear of corn.
  7. Sprinkle with chopped cilantro if desired and serve right away.
