- Preheat the oven to 425°F.
- Place the halved potatoes in a large mixing bowl.
- Add the olive oil, garlic, salt, black pepper, and Italian seasoning. Toss until the potatoes are evenly coated.
- Spread the potatoes in a single layer on a large baking sheet.
- Roast for 30 to 35 minutes, turning once halfway through, until the potatoes are golden brown and tender.
- Remove from the oven and immediately toss with the Parmesan cheese and chopped parsley.
- Serve warm.
