  • 2 pounds small Yukon Gold or red potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Directions
  1. Preheat the oven to 425°F.
  2. Bring a large pot of salted water to a boil.
  3. Add the potatoes and boil for 15 to 20 minutes, or until fork-tender. Drain well.
  4. Place the potatoes on a large baking sheet.
  5. Gently press each potato with the bottom of a glass or measuring cup until flattened but still intact.
  6. Drizzle with olive oil.
  7. In a small bowl, combine the salt, dried parsley, dried thyme, garlic powder, and black pepper.
  8. Sprinkle the herb salt evenly over the potatoes.
  9. Roast for 25 to 30 minutes until crisp and deeply golden around the edges.
  10. Serve hot.
