Cast Iron Green Beans with Bacon & Onion

  • 1 pound fresh green beans trimmed
  • 4 slices bacon chopped
  • 1 small yellow onion thinly sliced
  • 2 garlic cloves minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Directions
  1. Bring a pot of salted water to a boil.
  2. Add the green beans and cook for 3 to 4 minutes until just tender. Drain and set aside.
  3. Heat a large cast iron skillet over medium heat.
  4. Add the chopped bacon and cook until crisp.
  5. Add the sliced onion and cook for 4 to 5 minutes until softened.
  6. Stir in the garlic and cook for 30 seconds.
  7. Add the green beans to the skillet.
  8. Season with salt and black pepper, then cook for 3 to 4 minutes, stirring occasionally, until everything is hot and lightly browned in spots.
  9. Serve warm.
