- Bring a large pot of salted water to a boil.
- Add the carrots and cook for 6 to 8 minutes until just tender. Drain well.
- In a large skillet over medium heat, melt the butter.
- Stir in the brown sugar, bourbon, salt, and black pepper.
- Add the cooked carrots and toss to coat in the glaze.
- Cook for 3 to 4 minutes, stirring occasionally, until the glaze thickens slightly and the carrots are glossy.
- Sprinkle with chopped parsley and serve warm.
